Potassium sorbate, is the potassium salt of sorbic acid, white to light yellow scaly crystals, crystal particles or crystal powder, odourless or slightly foul-smelling, easy to absorb moisture when exposed to air for a long time, oxidative decomposition and discolouration. Soluble in water, soluble in propylene glycol and ethanol. It is often used as a preservative. As the least toxic food preservative, potassium sorbate is used in the food and feed processing industries, as well as in cosmetics, cigarettes, resins, spices and rubber.
